Cordon or gobelet pruning is carried out from December to March. Late pruning has recently been introduced on the most frost-prone plots. Even in the Gard, a hundred kilometres from the beaches of the Mediterranean, spring frosts are an increasingly common climatic hazard. In April 2021, temperatures fell to -5°C.
